Day off- feeling poorly


I felt quite flu-y throughout the night so when I woke I really wanted something warm, stodgy and comforting. Luckily the boys had a sleepover at Elsa's yesterday and were spending the day with her today. We'll timed I'd say!
Mashed banana, coconut, oats and water. Hit the spot perfectly and the coconut taste reminded me of the Anzac biscuits mummy used to make. Mummy, golden syrup, oats and coconut. So good!!
With a little protein shake.
My skin has been playing up a bit recently, so I have been using a homemade exfoliator for the last week. Sugar cane granules, honey and olive oil. It has worked a treat and my skin has been really soft and cleared up more than I expected!

Again with the feeling a little bit poorly, I obviously had to have chicken soup, but wanted it to be super simple. 
1 chicken breast browned with 1 small onion. Roughly chop 3 carrots, add in. Make up 1 cup chicken stock, add to saucepan, plus 1 more cup of hot water. Add in broccoli, cauliflower and mushrooms. Bring to the boil and leave to simmer away for 40 minutes. Mush with a soup musher.
I used cauliflower and broccoli instead of potatoes to avoid using high GI vegetables.
Although the contents of the soup are great for you, it's important to leave some good chunks in. Otherwise there is nothing for your body to break down, so the hydrolyic acid that is created when food enters your mouth is left without a job. Not ideal. Leaving pieces of vegetables and chicken uses this acid up so it doesn't stay sitting in your tummy. (Great scientific terms, hey!)
For dinner my host mum fancied Ratatouille last week, but we never got around to eating it, so I thought I would do it today. Much easier when the boys aren't around!

Quite impressed with my super fine slicing!

Mince beef layered on the bottom first, then tomato purée, garlic, onions and oregano.
Layer up the courgette and aubergine.
Add in peppers for colour.  Sprinkle over ground black pepper and thyme with a drizzle of olive oil. Cover with baking parchment and bake for 45 minutes at 180.  It turned out really quite we'll and I am really impressed with it! While it cooked I snacked on 2 carrots.
While writing this I am being incredibly patriotic, watching The Great British Bake Off with a cup of PG Tips (and a frozen banana, but shh that's Guadeloupian and not British!)
Weigh in Wednesday tomorrow. It is funny how suddenly something just clicks and gives you a kick up the backside with motivation and determination. I have been so good this week, despite feeling sorry for myself with my dodgy eye and not being able to run (I cannot deal with another burst blood vessel in my eye!). I haven't licked the Nutella knife once when making the boys breakfast or had dessert when everyone else has. So fingers crossed for tomorrow, although I know it isn't just about the number on the scale. I just need to monitor that number, as not doing that clearly had a not very good effect!!!!
